We made this delicious drink, while temperature were at their highest: So, a good scented and well-iced tea was in order. To make this iced tea we recommend a green tea delicately scented with citrus and ginger, it will intensify the zesty and ginger notes of the drinks. To soften a little the tea, add the juice of beautiful ripe peaches (we must enjoy the season is short!) And agave syrup and you get an iced tea to consume at cocktail hour or throughout the day!
4 beautiful ripe peaches
2 tbsp. citrus green tea
4 cm fresh ginger
1 C. lemon juice
2 tbsp. Agave syrup
1 branch fresh basil
Bring 60cl of water to a boil. Off the heat, add the roughly cut ginger and let steep for 5 minutes.
Chop 3/4 basil leaves and place them in a tea ball with citrus tea. Add to the pan with the ginger and let steep for 3 minutes. Filter the tea then add the agave syrup and mix well to dissolve it. Let cool.
Meanwhile, peel the peaches and remove the kernels. Cut them roughly and then mix them with 12 cl of water to obtain a smooth puree, if necessary add a little water. Switch to Chinese Mix the peach juice, cold tea and lemon juice in a carafe and top with ice cubes.
