Soupe au poireaux

This week we are bringing to you the leeks soup recipe! Indeed, vegetables are an inexhaustible source of vitamins, minerals, and other elements. The preparation of vegetable broth allows a diffusion of their vitamins. This soup will bring you all the necessary vitality.

Ingredients for 4

  • 5 leeks
  • 2 carrots
  • 2 potatoes
  • 4 fresh onions
  • 1 celery stalk
  • 1 bouquet garni
  • 30 g of parmesan cheese
  • 1 sp. olive oil
  • salt and pepper


Step 1
Wash the leeks, peel the carrots and the potatoes. Slice them together with the leeks and the celery stalk. Peel 1 onion and slice it.

Step 2
In a large pot, boil 2 liters of water with the onion, the bouquet garni, and pepper. Then add the vegetable, salt slightly and allow to simmer, half-covered for 45 minutes.

Step 3
Filter the vegetable broth and pour it back into the pot peel and slice the remaining 3 onions into the broth and return to a boil for 5 minutes. In the meantime, blend the vegetables and pour into the broth along with olive oil.

Step 4
When boiling resumes, remove from heat. Serve with grated parmesan.
